We are seeking a **passionate and experienced Head Pizzaiolo** to join our dynamic team at Luigia Restaurant in Dubai. An award-winning Italian Restaurant concept that brings the heart of Italy to every table & was founded in Geneva, Switzerland, As Head Pizzaiolo, you will be responsible for leading the pizza section, ensuring the highest quality and consistency of our signature pizzas, while mentoring a team and upholding traditional Neapolitan techniques. **Key Responsibilities**: - Oversee the daily operations of the pizza station, including dough preparation, toppings, baking, and service.
- Maintain consistent quality and presentation standards aligned with Luigia’s brand and recipes.
- Manage inventory and ordering of pizza ingredients while minimizing waste.
- Train, supervise, and motivate junior pizzaiolos and kitchen team members.
- Ensure compliance with food safety, hygiene, and sanitation standards.
- Minimum 5 years of experience in a high-volume Italian kitchen, with at least 1- 2 years in a similar leadership role.
- Proven expertise in authentic Neapolitan pizza-making,



including hand-stretching dough and operating wood-fired or stone ovens.
- Strong leadership and team management skills.
- Good understanding of food safety and HACCP principles.
- Passion for Italian cuisine, with attention to detail and consistency.
