La risorsa, riportando al Pastry Chef, si occupa di: - preparazioni di base, lievitati, pane e dolci al piatto (dessert, sorbetti e semifreddi) e dell’impiattamento
- legge ed interpreta le ricette e la documentazione técnica,
sceglie le materie prime e ausiliarie rispettando gli standard di qualità e prevedendone la quantità necessaria
- cura il magazzino e le celle frigorifere (scadenze, temperatura, pulizia)
- allestisce e tiene pulito il posto di lavoro The resource, reporting to the Pastry Chef, deals with: - basic preparations, leavened products, bread and desserts (dessert, sorbets and semifreddi) and plating
- reads and interprets the recipes and the technical documentation, chooses the raw and auxiliary materials respecting the quality standards and foreseeing the necessary quantity
- takes care of the warehouse and cold rooms (deadlines, temperature, cleaning)
- set up and keep the workplace clean
- È richiesta un’esperienza di almeno 2 anni in strutture di lusso di pari livello
- Buona conoscenza delle tecniche di base della pasticceria italiana
- Rispetto degli standard di igiene sul lavoro e personali
- Serietà, responsabilità e passione
- Propensione al lavoro in team
- Possesso HACCP
- At least 2 years of experience in luxury establishments of the same level is required
- Good knowledge of the basic techniques of Italian pastry
- Compliance with occupational and personal hygiene standards
- Seriousness, responsibility and passion
- Willingness to work in team
- HACCP possession
