Sataya Collection is representing a new private members’ club opening in Malta later in 2026, backed by an established and fast-growing hospitality group with a strong footprint across the island’s dining and lifestyle scene. The club will bring together seasonal Mediterranean dining, a distinctive cocktail programme, cultural events and thoughtfully designed spaces for members to meet, work and spend time.
We’re looking for an experienced and genuinely creative Bar Manager to help shape the bar identity from the ground up and lead its operation through pre-opening, launch and beyond.
The Role
This is a rare opportunity to build a bar programme from scratch rather than inherit one. You’ll take ownership of the day-to-day operation and commercial performance of the bar, working closely with the senior food and beverage and culinary teams to create a drinks offering that complements the club’s Mediterranean food philosophy while bringing genuine creativity and theatre through a dedicated cocktail lab.
It’s a role that asks for both sides of the job in equal measure: the creative instinct to develop an original, well-considered drinks programme, and the operational discipline to run a busy bar properly – service standards,
team development, stock and margin control, and a consistently warm, polished member experience.
As part of the pre-opening team, you’ll also help build the systems, service rituals, menus, supplier relationships and training programmes ahead of launch.
Scope of Role:
Pre-Opening & Launch
Help develop and implement the full bar concept ahead of opening, including operating procedures, service standards and bar controls.
Contribute to the selection of glassware, equipment, spirits, wines, ingredients and bar technology, and build relationships with local and international suppliers.
Support recruitment, onboarding and structured training of the opening bar team, covering product knowledge, service standards, member recognition and responsible alcohol service.
Support pre-opening tastings, rehearsals, trial services and launch events.
Beverage Programme
Develop and continuously evolve a creative, commercially sound cocktail and beverage programme, working closely with the culinary team.
Lead experimentation and product development within the cocktail lab, including seasonal and low/no-alcohol options.
Maintain rigorous documentation of recipes, specifications, presentation standards and costings.
Operations, Team & Commercial
Lead the daily bar operation with a visible, hands-on presence during service.
Build and develop a high-performing team, including rotas, coaching, performance management and succession planning.
Take ownership of beverage sales, cost of sales, gross profit and stock control, including supplier negotiation and accurate stock counts.
Ensure full compliance with local licensing, food safety and responsible alcohol service requirements.
The Ideal Profile:
Previous experience as a Bar Manager, Assistant Bar Manager or senior bar leader within a premium restaurant, luxury hotel, private members’ club or recognised cocktail bar.
Experience running a busy, high-volume bar operation, ideally with pre-opening experience or exposure to private members’ clubs.
Strong knowledge of classic and contemporary cocktails, spirits, wines and beverage trends, with a track record of creating or contributing to successful menus.
A solid grasp of beverage costing, margins, stock control and commercial performance.
Proven ability to recruit, train and develop a bar team, with genuine leadership presence.
A warm, confident and member-focused approach to service, with the calm and organisation to handle demanding periods.
Fluency in English; additional languages would be an advantage.
Flexibility to work evenings, weekends, public holidays and events.
