Overview Constance Ephelia, our luxury resort destination in Seychelles, is seeking a talented and creative Pastry Junior Sous Chef to join our distinguished culinary team. In this pivotal role, you will support the Pastry Chef in delivering exceptional pastry creations and baked goods while leading and mentoring junior pastry staff. You will be instrumental in maintaining the highest standards of quality, innovation, and presentation across all pastry operations within our fine dining establishments. Responsibilities Oversee daily pastry production, ensuring consistency, quality, and adherence to established recipes and plating standards Develop and execute innovative pastry designs and seasonal menu items, demonstrating creativity and culinary expertise Supervise and mentor junior pastry team members, providing guidance on techniques, food safety protocols, and professional development Manage inventory, portion control, and cost efficiency within the pastry section whilst maintaining meticulous organisation Prepare and present complex pastry items including laminated doughs,
chocolate work, sugar artistry, and contemporary plating techniques Maintain rigorous food safety and hygiene standards, ensuring compliance with all health and safety regulations Collaborate with the culinary team to coordinate service delivery and respond to special requests and dietary requirements Train and conduct induction programmes for new pastry staff, fostering a culture of excellence and continuous improvement Monitor equipment maintenance and ensure the pastry kitchen remains organised and efficient at all times Contribute to menu planning and recipe development, bringing innovation and seasonal awareness to pastry offerings Qualifications Minimum 5 years' professional experience in pastry and baking within a fine dining or luxury hospitality environment Culinary diploma or professional certification in Pastry/Bakery Arts preferred Proven experience in a supervisory or junior manag
