To lead our kitchen, we are looking for a creative, visionary and experienced Chef de Cuisine (m/f/d) with strong leadership skills, who will bring our farm-to-table philosophy to life through exceptional regional produce, the highest quality standards and culinary craftsmanship, while creating extraordinary dining experiences together with the team.
YOUR TASKS:
Overall responsibility for the culinary experience of the Lodge – from breakfast and lunch to fine dining and open-fire cooking
Develop and continuously refine a distinctive culinary philosophy shaped by premium Alpine produce, regional authenticity and international standards
Take responsibility for all culinary areas, including the restaurant, Room Service and exclusive Private Dining experiences
Financial management of the kitchen department, with a strong focus on purchasing, inventory management, food cost and cost control while consistently maintaining the highest quality standards
Create exceptional menus for the Tasting Cube as the Lodge's signature culinary experience
Design exclusive cooking classes and innovative culinary experiences for our guests
Lead, develop and inspire the kitchen team while ensuring the highest quality standards
Work closely with the service team, Maître and General Management to continuously develop the culinary offering
YOUR PROFILE:
Several years of experience as a Chef de Cuisine or Sous Chef within upscale or luxury hospitality
A distinctive culinary style with a strong focus on regionality, seasonality and sustainability
Passion for farm-to-table cuisine, exceptional produce and authentic craftsmanship
Experience with à-la-carte breakfast concepts and multi-course dinner menus
Strong leadership skills, excellent organisational abilities and the ability to lead by example
Commercial mindset with excellent knowledge of costing and food cost management
High quality standards, creativity and a passion for innovation
Very good command of Italian, German or English
