Executive Chef
New F&B; Opening — Lecce | Opening Q1 2027
BANCO SRL is seeking an Executive Chef for a new opening in Lecce, a hybrid bar and kitchen format, currently in the pre-opening phase. The kitchen concept is to be built entirely from scratch, with no ties to local tradition: international cuisine with Mediterranean influences, defined from the ground up during this phase.
The Role
The Executive Chef leads the development of the culinary offering from the pre-opening phase onward, in coordination with the beverage programme and the overall direction of the project. Reports directly to ownership and is responsible for the kitchen across all its components: product, team, costs, procedures.
Responsibilities
Develop the kitchen concept and translate it into an operational menu
Define standards, recipes and production procedures
Recruit, train and manage the kitchen team
Manage food cost, ordering and supplier relationships
Ensure compliance with quality and food safety standards




Coordinate with bar and floor management for a consistent overall guest experience
Lead the kitchen's organisation through the opening phase, from the first menu testing to the first service
Requirements
Previous experience as Executive Chef or Head Chef in high-level venues, preferably international
Direct experience in at least one opening or repositioning of an F&B; venue
Solid competence in food cost management and supplier relations
Ability to build and lead a team from scratch
Professional working proficiency in English
