F&B; Supervisor - Palazzo Daniele & New Property in Nardò, Puglia Location: Gagliano del Capo (LE), Italy Contract: Seasonal - End of March to November 2026 Accommodation included About the Properties Palazzo Daniele is a 15-suite luxury boutique hotel in the heart of Salento, part of GS Collection and Design Hotels / Marriott Bonvoy. Known for its authentic, design-driven hospitality, it welcomes up to 30 guests in an atmosphere of refined simplicity. Opening soon in Nardò, the new GS Collection property will feature 14 luxury suites and a capacity of 30 guests, reflecting the same philosophy of art, design, and soulful gastronomy that defines Palazzo Daniele. Role Description We are seeking an F&B; Supervisor to oversee the restaurant operations of Palazzo Daniele and the new property in Nardò, ensuring excellence across all dining experiences. organizational skills, and a deep understanding of Mediterranean cuisine and hospitality. You will supervise Kitchen and Sala teams, manage supplier relationships, and ensure that service, presentation, and guest experience align with the GS Collection vision of understated luxury. You will also oversee daily restaurant operations, coordinate with Front Office, and act as the link with the GS Collection corporate team, reporting on performance and maintaining brand consistency. Main Responsibilities
- Supervise restaurant operations and teams across both properties.
- Manage relationships with all F&B; suppliers, ensuring quality and alignment with brand standards.
- Develop and update seasonal and event-specific menus (special dinners, retreats, weddings).
- Ensure service excellence, staff professionalism, and visual harmony in table settings and presentations.
- Oversee daily activities: bookings, guest counts, mise en place.
- Coordinate with the Front Office for seamless service flow.
- Maintain and implement F&B; service standards in line with the GS Collection philosophy.
- Monitor performance, analyze costs and departmental results, and report to the corporate team.
- Guarantee full compliance with hygiene, safety, and HACCP regulations. **Requirements**: - Proven experience in luxury hotels or fine dining (5-star level required).
- Fluent in Italian and English (additional languages are a plus).
- Strong management, communication, and organizational skills.
- Experience in supplier management and product sourcing.
- Creativity and confidence in menu and experience development.
- Deep knowledge of local cuisine, wines, and service culture.
- High attention to detail and refined interpersonal skills.
