Reporting directly to the Director of Finance, the Cost Controller will play a key role within the Finance team, supporting the hotel in maintaining effective cost control, accurate financial reporting and compliance with internal procedures and Corinthia standards.

The role will focus particularly on Food & Beverage cost control, while also monitoring operational costs across the property. The Cost Controller will work closely with the Finance team and Heads of Department, particularly F&B;, Kitchen, Purchasing and Operations, to monitor costs, analyse variances and support the hotel in achieving its financial objectives.

This is a hands-on, operational role, requiring strong attention to detail, analytical thinking and the ability to work independently within established procedures and deadlines.

Position Purpose To ensure accurate and effective monitoring of hotel costs, inventories, purchasing and consumption, providing timely and reliable analysis to support the Director of Finance and operational teams in maintaining budget discipline and improving cost efficiency.

The role is particularly focused on ensuring that actual costs are accurately captured, variances are identified and investigated, and financial controls are consistently applied.

Key Responsibilities

- Monitor and control operational costs across the hotel, with a particular focus on Food & Beverage.
- Check figures, postings and supporting documentation for accuracy and completeness.
- Perform daily checks of F&B; sales, covers, food portions, consumption and cost reports.
- Analyse consumption and purchasing patterns and identify significant variances.
- Monitor Food & Beverage cost percentages against budget and agreed standards.
- Conduct and support regular physical inventories and ensure accurate stock reconciliation.
- Analyse theoretical versus actual consumption and investigate discrepancies.
- Review and reconcile invoices, purchase orders, receiving records and supplier documentation.
- Monitor purchasing prices and identify significant price variations.
- Monitor wastage, complimentary items, staff meals and other non-revenue consumption.
- Ensure that inventory movements, transfers and consumption are accurately recorded in the relevant systems.
- Support the preparation of monthly cost reports, variance analysis and management information.




- Assist with month-end closing activities relating to inventory and cost of sales.
- Monitor budget performance and highlight relevant deviations to the Director of Finance.
- Identify opportunities for cost optimisation, waste reduction and process improvement.
- Ensure compliance with Finance procedures, internal controls and Corinthia Standard Operating Procedures (SOPs).
- Maintain accurate and well-organised financial records and supporting documentation.
- Coordinate cost-control activities with the relevant departments and ensure deadlines are consistently met.
- Support internal and external audit activities and provide the required documentation and information.
- Work closely with the Finance, F&B;, Kitchen, Purchasing and Operations teams to promote effective cost-control practices.
- Support the Finance team in achieving departmental objectives and the hotel's overall business goals.

Requirements

- Degree or diploma in Economics, Finance, Accounting, Hospitality Management or a related discipline is preferred.
- Minimum 2 years' experience in Cost Control.
- Previous experience in hotel accounting or financial control, with a strong understanding of hotel operations.
- Solid knowledge of Food & Beverage cost control, inventory and procurement processes.
- Good understanding of Point of Sale and hotel management systems.
- Experience with SunSystems, Simphony, Adaco and Opera Cloud will be considered a strong advantage.
- Excellent knowledge of Microsoft Excel and strong numerical skills.
- Fluency in Italian and English, both written and spoken.
- Previous experience in a luxury 5-star hotel environment is highly desirable.
- High ability to interpret and report financial information and high confidentiality

- Accuracy and timeliness of cost-control reporting.
- Accuracy and completion of monthly inventories and stock reconciliations.
- Effective monitoring of Food & Beverage cost percentages.
- Timely identification and investigation of cost and stock variances.
- Accuracy of purchasing, receiving and consumption records.
- Reduction and effective control of unexplained stock discrepancies and wastage.
- Compliance with Finance procedures, internal controls and Corinthia SOPs.
- Timely completion of month-end cost-control activities.
- Reliability and quality of financial information provided to the Finance team.
- Contribution to cost optimisation and operational efficiency.

Compensation & Benefits In line with our commitment to transparency, the gross annual salary (RAL) for this position ranges from €25,000 to €35,000, depending on the candidate's experience, qualifications and overall suitability for the role.
