About the Role

Based at Mandarin Oriental Cristallo, Cortina,



the Commis Chef supports the successful pre-opening and ongoing operation of the resort's culinary division. Reporting to the Chef de Partie and senior culinary team, the role assists in the preparation and production of high-quality dishes while developing technical skills in accordance with Mandarin Oriental culinary standards.
As a Commis Chef - Kitchen, you will be responsible for the following duties:
Pre-Opening Responsibilities
- Assist with the setup and organisation of kitchen workstations prior to the resort opening.
- Support menu testing, recipe preparation and operational trial services.
- Participate in pre-opening induction and culinary training programmes.
- Prepare kitchen equipment, utensils, ingredients and mise en place in accordance with operational standards.
- Assist in implementing food safety, hygiene and HACCP procedures.
Operational Responsibilities
- Prepare ingredients and assist in the production of dishes according to approved recipes and Mandarin Orie
