Mandarin Oriental Cristallo, Cortina is an upcoming luxury alpine resort set above the iconic mountain town of Cortina d'Ampezzo, in the heart of the UNESCO-listed Dolomites. About The Role

Based at Mandarin Oriental Cristallo, Cortina, the Commis Chef supports the successful pre-opening and ongoing operation of the resort's culinary division. Reporting to the Chef de Partie and senior culinary team, the role assists in the preparation and production of high-quality dishes while developing technical skills in accordance with Mandarin Oriental culinary standards.

As a Commis Chef - Kitchen, you will be responsible for the following duties:

Pre-Opening Responsibilities

- Assist with the setup and organisation of kitchen workstations prior to the resort opening.
- Support menu testing, recipe preparation and operational trial services.
- Participate in pre-opening induction and culinary training programmes.
- Prepare kitchen equipment, utensils,



ingredients and mise en place in accordance with operational standards.
- Assist in implementing food safety, hygiene and HACCP procedures.

Operational Responsibilities

- Prepare ingredients and assist in the production of dishes according to approved recipes and Mandarin Oriental standards.
- Ensure consistency in food quality, presentation and portion control.
- Maintain clean, organised and hygienic workstations throughout the shift.
- Follow instructions provided by senior chefs and support all sections of the kitchen as required.
- Ensure proper storage, handling and rotation of food products.
- Assist with receiving, storing and organising deliveries.
- Support inventory control by reporting stock shortages and minimising food waste.
- Demonstrate a willingness to learn new cooking techniques, recipes and operational procedures.
- Work collaboratively with the culinary brigade to ensure efficient service across all food and beverage outlets.
- Perform any other reasonable duties assigned by senior members of the culinary team.

Requirements

- Professional culinary qualification or currently completing formal culinary training is preferred.
- Previous experience in a professional kitchen, preferably within a luxury hotel or fine dining environment, is considered an advantage.
- Previous pre-opening experience is beneficial but not essential.
- Basic knowledge of culinary techniques, food preparation and kitchen operations.
- Good understanding of food safety, hygiene and HACCP principles.
- Strong willingness to learn and develop professionally.
- Ability to work efficiently in a fast-paced environment.
- Positive attitude, reliability and excellent teamwork skills.
- Good command of English; Italian is considered an advantage.
