About The Role
Based at Mandarin Oriental Cristallo, Cortina,
the Commis Chef supports the successful pre-opening and ongoing operation of the resort's culinary division. Reporting to the Chef de Partie and senior culinary team, the role assists in the preparation and production of high-quality dishes while developing technical skills in accordance with Mandarin Oriental culinary standards.
As a Commis Chef - Kitchen, you will be responsible for the following duties:
Pre-Opening Responsibilities
Assist with the setup and organisation of kitchen workstations prior to the resort opening.
Support menu testing, recipe preparation and operational trial services.
Participate in pre-opening induction and culinary training programmes.
Prepare kitchen equipment, utensils, ingredients and mise en place in accordance with operational standards.
Assist in implementing food safety, hygiene and HACCP procedures.
Operational Responsibilities
Prepare ingredients and assist in the production of dishes according to approved recipes and Mandarin Oriental standards.
