M Hospitality Recruitment are searching for a hands-on Head Chef for a fine dining Italian restaurant leading daily service from the pass and the line while managing the team and kitchen. Salary €65-75k
Job Overview
- Role Type: Hands-on, operational leadership (leading service from the pass)
- Cuisine: Fine dining Italian (artisanal pasta, regional specialties, modern techniques, big on using authentic Italian sources ingredients.
- Core Goal: Drive culinary excellence, mentor the brigade, and maintain strict profit and hygiene targets.
Key Responsibilities
Culinary & Service Execution
- Lead service: Cook and plate during peak service hours
- Menu development: Design seasonal fine dining Italian menus along with the owners, utilizing imported authentic ingredients and fresh local produce.
- Quality control: Inspect all prep and final plates to ensure strict adherence to recipe specs and fine-dining visual standards.
Kitchen Management & Leadership
- Lead by example: Foster a positive, high-performing kitchen culture.
- Train the brigade: Mentor junior cooks, commis, and sous chefs in classic and modern Italian culinary techniques.
- Scheduling:
Build efficient shift rosters that align with labor budgets and busy service windows.
Financial & Inventory Control
- Cost management: Monitor gross profit (GP) margins, food cost percentages, and waste reduction.
- Stock control: Oversee ordering, supplier relations, and inventory counts to ensure peak freshness.
- Compliance & Safety
- HACCP adherence: Maintain rigorous food safety, hygiene, and allergen standards at all times.
Requirements & Skills
- Proven experience as a Head Chef or Senior Sous Chef in an upscale or fine dining Italian environment.
- Deep expertise in Italian gastronomy, flavor profiles, and scratch-cooking (e.g., fresh pasta, stocks, butchery, breads etc.)
- Strong capability in a hands-on, high-pressure role without losing sight of administrative duties.
- Solid financial acumen (understanding food cost, P&L;, and ordering software).
Job Type: Full-time
Pay: €65,000.00 - €75,000.00 per year
