Melaleuca bakery + bistrot is an international brunch spot seeking an experienced Executive or Head Chef Consultant for a hands-on, short-term project across our three high-volume cafés in central Florence.
This is not a desk-based role. You will work directly in the kitchens alongside our teams to elevate dishes, develop new menu items, standardise prep, and improve operational systems—while maintaining a fast, efficient brunch and café service.
Key Responsibilities
Menu & Food Development
- Elevate existing dishes while preserving menu identity
- Improve plating and visual impact
- Develop new, world-inspired dishes suitable for high-volume service
Prep & Production
- Standardise prep across all locations
- Implement structured prep systems in the new bakery prep area
- Create clear recipes, batch processes, and train teams
Logistics & Distribution
- Design prep ordering and distribution systems between locations
- Set par levels, ordering schedules, and delivery flows
Service & Operations
- Improve kitchen organisation and service flow
- Maintain or improve ticket times in a fast-paced environment
Training & Future Planning
- Hands-on training for kitchen teams
- Advise on kitchen layout, workflow, and equipment for future growth
Ideal Profile
- Experience as an Executive Chef or Head Chef
- Background in high-volume cafés, brunch, or modern all-day dining
- Multi-site experience preferred
- Practical, hands-on, solution-driven approach
- Available to work on-site in Florence

Melaleuca bakery + bistrot è un brunch spot internazionale e cerca un Executive Chef o Head Chef Consulente per un progetto operativo a breve termine nelle nostre tre caffetterie ad alto volume nel centro di Firenze.
Il ruolo è completamente operativo: lavoro diretto in cucina con i team per migliorare i piatti, sviluppare nuove proposte, standardizzare le preparazioni e ottimizzare i sistemi di lavoro, mantenendo un servizio pronto ed efficiente.
Responsabilità Principali
Menu e Sviluppo Piatti
- Migliorare i piatti esistenti mantenendo l’identità del menu
- Curare impiattamento e presentazione
- Sviluppare nuovi piatti ispirati alla cucina internazionale
Prep e Produzione
- Standardizzare le preparazioni tra le sedi
- Strutturare i processi di prep nel laboratorio bakery
- Definire ricette, produzioni in batch e formare i team
Logistica e Servizio
- Organizzare sistemi di distribuzione del prep
- Definire par level, ordini e flussi di consegna
- Migliorare i flussi di lavoro senza aumentare i tempi di uscita
Formazione e Sviluppo
- Training pratico dei team di cucina
- Consulenza su layout, flussi e attrezzature per il futuro
Profilo Ideale
- Esperienza come Executive Chef o Head Chef
- Background in brunch, caffetterie ad alto volume o casual dining
- Esperienza multi-sede
- Approccio pratico e orientato alle soluzioni
