Four Seasons Hotel Firenze is currently looking for a talented Overnight Cook to join our Team.
About the role
The Overnight Cook prepares and serves food items for guests and employee during the overnight shift in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment.
What you will do
- Prepare and serve food of consistent quality following recipe cards as well as production, portion, and presentation standards per order from servers; often working alone or without direct supervision.
- Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.
- Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
- Assist with prep-work for next shift and with cleaning operations of the kitchen and storage areas.
- Assist with food preparation in other kitchen areas when needed.
What you bring
- Cooking school or culinary institute education or equivalent experience.
- A minimum of two years culinary experience.
- Ability to operate, maintain and properly clean deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, flat top grill. Proficient knife skills and ability to multi‑task.
- Reading, writing and oral proficiency in the Italian language. English is a plus.

Schedule & Hours:
Tempo pieno position, overnight shifts. Successful candidates must hold legal authorization to work in Italy at the time of application.
The position is at the C3 Level of the Tourism Collective Labor Agreement (CCNL), with a starting gross annual salary aligned with the contract’s minimum standards and opportunities for growth based on experience.
